Crema de Fruta


There are no ladyfingers here in the Philippines, so naturally we do not have wide knowledge about Tiramisu, English Trifle, or Chalottes. But we do have a substitute, or an alternative in this case, graham crackers. I do understand that you guys also have them, but we use them in a very different way.

I understand that you guys love your s'mores, but they aren't the main reason behind the graham cracker trade here in the Philippines [did I mention I am currently studying Business Administration majoring in Marketing Management? I didn't!? Well now you know.] Graham crackers are our ladyfingers.


Instead we have Ref Cakes [our version of ice-box cake], Mango Graham Shake, Mango Float, and, the most popular of all, Crema de Fruta which literally means "cream of fruit".

Crema de Fruta is basically like a trifle, but instead of lady fingers, we use graham crackers, we also add sweetened condensed milk, and we used tropical fruits [pineapple, mangoes, papayas], and semi-fruits [I am looking at both of you, Nata de Coco and Maraschino Cherry]. You can substitute any fruit of your liking if the fruits mentioned are not your thing.

This is not our traditional Crema de Fruta, which is traditionally a layered dessert. This is more of a modern take, but if you want to take the traditional path, I recommend going here.


Crema de Fruta
Notes [ HEAD: Cherry, Nata de Coco, Papaya, Pineapple, HEART: Graham Cracker, BASE: Cream ]

Ingredients [makes 4 servings]
1 1/2 c. crushed graham crackers
1 c. whipping cream
1/2 c. sweetened condensed milk
different fruits [traditionally pineapple, papaya, maraschino cherry, and nata de coco]

Directions
1. MAKE MILK MIXTURE: In a bowl, whip heavy whipping cream until double in volume. In a separate bowl, pour the sweetened condensed cream. Fold in the whipped cream.
2. ASSEMBLE ON GLASS: In a glass, add a layer of crushed graham crackers, then a layer of fruits and the milk mixture. Repeat until you fill up the glass.
3. CHILL: Refrigerate the finished desserts for about 8 hours to soak and soften the graham crackers in the milk mixture.
4. GARNISH AND SERVE: Topped with more fruits, then serve. Enjoy.
