Red Velvet Cupcakes


Valentine's Day is coming, why don't you make some classic red velvet cupcakes? These red velvet cupcakes are topped with a delicious cream cheese frosting and topped with heart sprinkles.

I developed this recipe based on what I have heard of red velvet. I have never tried it so I have to predict what it should taste like. Base on what I have read, it is typically topped with cream cheese frosting and the cake have cocoa powder. I don't know if it is suppose to be a chocolate or a vanilla cupcake, so I just did both. These cupcakes are like a cross of chocolate and vanilla cupcakes.


Red Velvet Mini Cupcakes
Notes [ HEAD: Cream Cheese, BASE: Chocolate, Vanilla ]

Ingredients

Cupcakes [makes 18-20 mini cupcakes, or 6-8 regular cupcakes]
1/2 c. all purpose flour
1/4 tsp. baking powder
1/4 tsp. baking soda
1 tbsp. cocoa powder
dash of salt
1/4 c. butter, room temperature [1/2 stick]
1/2 c. sugar
1 egg
1/2 tsp. vanilla extract
1/4 c. sour cream

Frosting
1/4 c. butter, room temperature [1/2 stick]
1/4 c. cream cheese, room temperature
1/2 tsp. vanilla extract

Directions
1. MAKE BATTER: Preheat oven to 375°F. Line cupcake pan with liners. 
2. Sift flour, baking powder, baking soda, cocoa powder and salt into a bowl.
3. In a separate bowl, cream butter and sugar until light and fluffy, then add egg and vanilla extract.
4. Add half of the flour mixture and sour cream to butter mixture, beat then add remaining flour mixture.
5. BAKE CUPCAKES*: Fill liners with a tablespoon of batter. Bake for about 12 minutes, do toothpick test. If they are not done, check at 1 minute intervals. Cool on wire rack.
6. MAKE FROSTING: In a bowl, beat butter and cream cheese until light and fluffy. Then add powdered sugar. Beat until thoroughly mixed.
7. ASSEMBLE CUPCAKES: Frost the cupcakes. Top with heart sprinkles.

* FOR REGULAR CUPCAKES: Fill liners 2/3 full. Bake for about 18 minutes, do toothpick test. If they are not done, check at 1 minute intervals. Cool on wire rack.
