Cucumber Lemonade Soda


Ever since I made my first soda, a pineapple-flavored one, I wanted to make other unique soda flavors. Unfortunately, I can't actually think of any for a long time. Until now. The inspiration came from a unlikely source.

The vending machine in my university stopped serving blue lemonade, which is pretty self-explanatory. I loved that thing despite it's blue food color artificialness, so I was pretty surprised and sad that it is now gone. But is was replaced by another lemonade, this time with a vegetable [or is it a fruit?] instead of food color.

Cucumber lemonade is a very interesting drink with a strong cucumber flavor but nonetheless delicious and refreshing, not to mention healthy. It is even more refreshing when made into soda, adding some exciting bubbles to this incredibly refreshing drink.


Cucumber Lemonade Soda
Notes [ HEAD: Lemon, HEART: Cucumber ]

Ingredients [makes about 4 glasses]
seltzer/carbonated water

1/4 c. lemon juice [from 1 large lemon]
1/2 c. cucumber juice [from 1 cucumber, pureed then strained]

1/2 c. water
1/2 c. sugar

Directions
1. MAKE SIMPLE SYRUP: In a saucepan, combine sugar and water. Simmer over medium heat until sugar is melted. Let cool.
2. MIX CUCUMBER-LEMON JUICE: In a glass or a small bowl, combine the lemon and cucumber juice.
3. MAKE SODA: In a glass, add 3 tablespoons of the lemon-cucumber mixture. Add about 2 tablespoons simple syrup, or as desired. Add enough seltzer to make one glass. Add ice and garnish if desired.
