Blackberry Shortbreads and Chocolate Cookies


I made two kinds of cookies today, blackberry shortbreads and chocolate cookies. I made the shortbreads for a cupcake and the chocolate cookies for an ice cream, but they can also be filled for some homemade Oreos.

I bought some cookie cutters months ago, but I don't use them that much. But I do love cookies, they are easier to carry than cupcakes and you can give them as presents without worrying the recipient might shake the box and ruin the frosting. That happened to me twice, with cupcakes and a fondant cake inside, fortunately I wasn't present when they opened them. I just wouldn't know what to do, should I be embarrassed, or are they to blame? Good thing that they didn't mention them on our subsequent meetings. Anyways, that was a very long time ago and I haven't seen them for quite some time.

So I decided to use one of the cookie cutters today, particularly the heart cookie cutter, to make cookies - surprise! Then I realized there isn't a cookie recipe on this blog, except for the polvorons but I don't think those are cookie-y enough, so I made two kinds!

These cookies are very different from each other, one is tart, buttery, and crumbly, while the other is crunchy and chocolatey. Let's start with the shortbreads:


Blackberry Crumble Shortbreads
Notes [ HEAD: Blackberry, BASE: Butter, Cinnamon ]

Ingredients [makes about 2 dozens of cookies]
3/4 c. all purpose flour
1/4 c. sugar
1/3 c. butter, room temperature
1/2 tsp. ground cinnamon

1/4 c. blackberry puree
1/2 tsp. lemon juice
1 tbsp. sugar 

Directions
1. MAKE BLACKBERRY SAUCE: In a saucepan, cook blackberry puree, lemon juice, and sugar in medium heat until mixture is thick. Let cool.
2. MAKE COOKIE DOUGH: Preheat oven to 350°F. In a bowl, mix the flour, sugar, and cinnamon. Cut butter into the mixture until it forms a crumbly dough.
3. Roll dough into 1/4 inch thickness, then cut with your cookie cutter. Make an indent in the middle of the cookie and fill with the cooled blackberry sauce.
4. BAKE COOKIES: Bake for about 20 minutes or until cookies are golden brown. Cool in a wire rack then serve. Enjoy.


Chocolate Cookies
Notes [ BASE: Chocolate, Butter ]

Ingredients [makes about 4 dozens of cookies]
1 1/4 c. all purpose flour
1 c. caster sugar
1/2 c. butter, room temperature
1 egg
1/2 c. cocoa powder
1/4 tsp. baking powder

Directions
1. MAKE COOKIE DOUGH: Preheat oven to 375°F. In a bowl, beat butter until soft and fluffy. Add sugar and egg, mix well. Then add the cocoa powder, flour, and baking powder. Mix until it forms a dough.
3. Roll dough into 1/4 inch thickness, then cut with your cookie cutter.
4. BAKE COOKIES: Bake for about 15 minutes. Cool in a wire rack then serve. Enjoy.
